Chocolate & Coconut Bark

With our 4 week elimination challenge about to start and no chocolate allowed, try this amazing substitute to help your sweet tooth…

Ingredients 

80g coconut oil

3 tbsps organic cocoa powder

1 tsp stevia

80g chopped nuts

50g chocolate flavoured whey protein

(serves 6)

Line the baking tray with grease proof paper and put in the freezer.

Melt the coconut oil gently in a pan over medium/low heat.

Add the cocoa powder and stevia, stir well to combine.

Remove from the heat and stir in the nuts and whey protein.

Add a little cold water if needed to get the consistency thick but pourable.

Remove the baking tray from the freezer and pour the mixture onto the paper spreading evenly to desired thickness.

Put in the freezer and leave for 20 minutes, If you can resist not eating it all in one go, the bark can be kept in the freezer for up to 2 weeks.
